Pasqua Wines

Passione e Sentimento Bianco Veneto IGT. The grapes are selected and picked in advance and left to dry for a brief period in crates in the drying loft, thus obtaining a greater concentration of aromas and sugars. After the pressing of the grapes, they are macerated on the skins for 12 hours to increase the complexity and structure of the wine. Vinification takes place in stainless steel tanks at a controlled temperature. Once fermentation is completed, part of the wine is aged in French oak barrels. The wine is then assembled and bottled. $11.99

Passione e Sentimento Rosso Veneto IGT. Founding wine and starting point of the Romeo & Juliet project; red like love and passion. A blend of Corvina and Croatina grapes with a percentage of Merlot, which the drying period renders velvetier still. The grapes are picked by hand and left to dry in wooden crates in the drying loft. There, by means of humidity control and air circulation, the grapes lose around 30% of their water content and achieve a high sugar concentration. Given that the grapes have differing ageing times, vinification takes place separately in steel tanks; the blend being created only after this. PassioneSentimento is aged in oak tonneau barrels for 3 months. $11.99

Valpolicella Ripasso DOC Superiore. Using the Ripasso technique we obtain the maximum expression of the Corvina, Rondinella, Corvinone and Negrara grapes, in order to produce this wine labelled Valpolicella Superiore D.O.C.. After long maceration on the skins, it remains in stainless steel until February before being pumped over the pomace from the vinification of the Amarone. This causes a new fermentation, which increases the body and aromas of the wine. It is then transferred into barrels of various sizes for 8 months prior to the final blend being prepared. After bottling, it undergoes another long period of maturation. Coming as it does from the valley of the cherry trees, the Valpantena, this wine displays assertive aromas of morello cherries, but also of blueberries and currants, which give way to liquorice notes and toast-like hints. $19.99

Amarone della Valpolicella Limited Edition Labyrinth. The grapes are hand-picked in mid-September and laid out to dry in the drying loft for approximately three months, where the grapes lose around 25-30% of their weight with the resulting concentration of the substances present. After pressing, alcoholic fermentation in steel vats begins, for around 25-30 days at a controlled temperature and continuous punching down is carried out to encourage extraction of color and tannin. When finished, the wine is transferred to French oak barrels where the malolactic fermentation takes place that gives softness to the wine. After about 18-20 months of ageing, the wine is bottled and aged for a further four months. $35.99
